A great cup comes down to three things: how much tea, how hot the water is, and how long it steeps. Here is how to get each one right.

The basics

Three things decide how your cup tastes.

    Amount

    Use 1 tablespoon of leaves for each cup. Making iced tea? Use 2, because the ice waters it down a little. Matcha is different: ½ teaspoon for a bowl.

    Water

    Boil the water. For black and herbal tea, let it cool for 1 to 2 minutes. For green tea and matcha, let it cool for about 5 minutes, because water that is too hot makes them bitter.

  3. 3

    Time

    Set a timer, then take the leaves out. Green tea turns bitter if it steeps too long. With most of our herbal teas, a longer steep brings out more flavour.

Tea Strainer

The easiest way to brew whole leaf tea, one cup at a time.

  1. 1Set the Tea Strainer in your cup, with its handle over the cup handle.
  2. 2 Add 1 tbsp of leaves.
  3. 3 Pour hot water over the leaves and let them steep.
  4. 4 Lift the strainer out and set it in its resting cup.

  1. 1Twist off the lid and pull out the inside chamber.
  2. 2 Add 1 tbsp of leaves and fill with hot water to the top line.
  3. 3 Let it steep.

Iced tea

Brew it hot and a little stronger, then chill it.

  1. 1Use 2 tbsp of leaves per cup. The ice will water it down a little.
  2. 2 Steep in hot water for your tea's full time.
  3. 3 Take the leaves out and let it cool, then chill it in the fridge.
  4. 4 Pour over ice.

  1. 1Boil water and let it cool for about 5 minutes, then pour it in.
  2. 2 Add ½ tsp of matcha. For a latte, use ¾ to 1 tsp.
